I've wanted to make croquettes for a few years now. My love for tapas has made me crave croquettes more than the occasional trip. After a visit to Spain several years ago I fell in love with them. My first attempt at making croquettes went badly wrong. I didn't have all the ingredients and it was just so bad. I had to redeem myself and I think I did. The example is clearly below. So the recipe for these are as follows.
Once this is done form them into balls or logs. Don't go too big, easy mouthfuls are best. Mix the flour with some salt and pepper and a teaspoon of paprika. Then lay out three separate bowls/plates with the flour mix, milk and breadcrumbs in that order. Grab your croquettes, cover with the flour mix, then drop it into the milk and cover with breadcrumbs. Easy. Now you are ready to fry. I used maze oil which was quite good and a good change from sunflower or vegetable oil. Once the oil is ready dunk in the croquettes for about 3 or 4 minutes until golden and crispy. Last step is too eat it with a dip. I made a chilli Mayo dip, with paprika, cayenne pepper and a bit of lemon juice. It was a great snack and the missus and I were very happy.
