A lot has been written by me about other people's food and rightly so. I have been to many nice places and all serve as inspiration so that one day I can try and make it myself. Ask my family and girlfriend, when at home all I watch is either sports or food programmes. The problem is time, most often I am just not bothered to try certain recipes. As well as this I can be quite cheap and therefore I just won't by the correct ingredients either. So planning is vital. Earlier this week I had decided I wanted to make Greek style chicken. Now I was prepared and ready. The night before I got my ingredients and made a marinade for the chicken and set out my stall for a good meal. Before every dish I make I do a lot of research online to see how to make a recipe. Of the ten or so I see I pick out the options that I think will work and just Go with it. So I made Greek style chicken souvlaki with tzatiki and halloumi. For the chicken i created a marinade the night before and this was chucked on top of the chicken. Lemon juice, olive oil, salt, pepper and minced garlic. There are no measurements just my eyes. My advice would be to season generously and a couple tablespoons each of lemon juice and olive oil. This was all on three medium pieces of chicken and rubbed together and placed In the fridge overnight and ready for Friday. What is great about this dish is that it is easy and quick to make. Over a medium heated pan griddle you will need to cook the meat for 5-6 minutes on each side. My worry was that I would over cook it and make it dry so keep an eye on it. Alongside this I had a tzatiki dip. This was made with yoghurt, salt and pepper, lemon juice, cucumber, garlic and mint. Fresh mint chopped is the best for this and gives a great flavour and coolness alongside the chicken. My lovely girlfriend makes the best salad and accompanied the food with another one. nice and simple and it works- tomatoes, onions, cucumbers, coriander and pumpkin seeds. This was drizzled with olive oil and lemon juice and seasoned liberally. I was very happy with this as the chicken was moist and tasty. I think that cooked on a barbeque would give it an extra edge and flavour. So while the sun is out make the most of it.
